Pardon my ignorance, but how can I get one of those short white texts that appear just below character' names and above their avatars? I put something in "personal text" but it doesn't show.

That is a Custom Title and not really something you pick ;D the admins either poke fun at you with it or put in something that they think is appropriate to your character. However I recommend you check out this thread for more details.

Edit: Also depending on which theme you are using, you can see your personal text, but it shows below the avatar rather than above.
